This in one of those dishes that highlights the genius of Nyonya Cooking. A well-researched, a complicated dish made simple but dish out the most amazing, tender, succulent, and smashing roasted turkey (unfortunately no turkey in this part of the season, so substituted the turkey with a chicken! Can you tell the difference?). The guests that came for the birthday party were from Arequipa (high in the mountain ranges of the Andes, Peru). They are hard core Catholic Christians and never miss to prepare roasted turkey for Christmas Eve every year. They are experts in preparing roasted turkey, so to speak.

Also, the Guardian (Guardian of the Kitchen) had roasted a turkey with the most complicated stuffing that went into the turkey during a Thanksgiving when we were in the States some time ago.

So, the first impression that the Guardian remarked was this Roasted Turkey with Black Pepper Sauce recipe is inferior for the stuffing (only an onion, half lemon, and a chilli) and gave a score of 9.8.

But, later she changed her mind scoring a 10.0 instead for the supper goodness of the dish. If it is good, it is good.

We were shocked (including me) on how super simple and delicious was this Roasted Turkey with Black Pepper Sauce dish. It was a unanimous decision that the dish scored a 10.0, no doubt about it, so said the experts from Arequipa, Peru and the Guardian!
