I have just a few simple ingredients leftover from making my other dish, "Loh Mai Gai" (Glutinous rice with chicken & chinese sausage) so I decided to fry them with the tofu to make my lunchbox treat
Tofu comes in white blocks of varying softness: silken, soft, firm and extra firm. Beyond this, there are also many categories of tofu but the white tofu is readily available in the supermarket these days

- Chinese mushrooms, soaked, drenched and sliced
- 2
- cloves of garlic, chopped
- 1 tbsp
- dried shrimps
- 1⁄2
- Chinese sausage, diced
- 1
- Spring onion, chopped
- 1⁄2 tsp
- light soy sauce
- 1⁄2 tsp
- fish sauce
- 1⁄2 tsp
- sugar
- 1⁄2 tsp
- oyster sauce
- 1⁄2 tsp
- sesame oil

- salt to taste
Steps to Prepare

- 2 Chinese mushrooms, soaked, drenched and sliced
- 2 cloves of garlic, chopped
- 1 tbsp dried shrimps
- 1⁄2 Chinese sausage, diced
- 1 Spring onion, chopped
- 1⁄2 tsp light soy sauce
- 1⁄2 tsp fish sauce
- 1⁄2 tsp sugar
- 1⁄2 tsp oyster sauce
- 1⁄2 tsp sesame oil
- salt to taste
Using some oil, try to brown the tofu on all sides on medium heat. Even if it got stuck in the pan and broke into smaller pieces, it is ok as it will just have some crispy bits which is nice to have a slightly different texture. Leave it on one side of the pan and stir-fry the rest of the ingredients, except the chopped spring onions ( use for garnishing) until they are fragrant. Dried shrimps are optional. Then, add all the seasonings to the dish and garnish with spring onions.
