- Frying oil for frying the fish
- 670 g
- Fish – I use Tilapia
- 20 g
- Garlic – chopped into small pieces
- 65 g
- Shallots – chopped into small pieces
- 1 tbsp
- cooking oil
- 110 g
- Large Chilies – chopped into small pieces
- 1⁄2 cup
- sugar
- 1⁄4 cup
- vinegar
- 2 tbsp
- fish sauce
- —
- Coriander for garnish
Steps to Prepare
Step 1 of 4
- Frying oil for frying the fish
- 670 g Fish – I use Tilapia
Basically you clean and dry the fish well, rub with some salt. Put oil in a pan and wait until it's really hot before ad in the fish. Then turn down the heat to medium. You can see the method on the video posted above.
Step 2 of 4
- 20 g Garlic – chopped into small pieces
- 65 g Shallots – chopped into small pieces
- 1 tbsp cooking oil
- 110 g Large Chilies – chopped into small pieces
To make the sauce, add 1 Tbsp of oil in a pan, over medium heat. Add garlic and shallots and chilies and stir-fry until fragrance.

- 1⁄2 cup sugar
- 1⁄4 cup vinegar
- 2 tbsp fish sauce
Add sugar, fish sauce, water and vinegar. Let the sauce simmer until the liquid reduce to half of the amount.
Step 4 of 4
- Coriander for garnish
Spread the sauce over crispy fried fish and garnish with coriander. Served as a sharing dish with steamed rice in Thai style.
